Pumpkin Protein Donuts with Maple Glaze

Ingredients

  • 1 cup gluten free 1:1 flour
  • 1/2 cup almond flour
  • 2 scoops Pumpkin Pie Select Protein
  • 2 tsp pumpkin pie spice
  • 1 1/2 tsp banking powder
  • 1 tsp baking soda
  • Pinch of salt
  • 4 eggs
  • 3/4 cup pumpkin puree
  • 1/2 cup almond milk
  • 1/2 cup coconut sugar
  • 1 tsp vanilla extract

Glaze

  • 1/2 cup powdered sugar
  • 1 tsp maple extract
  • 2-3 tbsp almond milk

Directions

  1. Preheat the oven to 350 F and prepare a 3-inch donut pan with non-stick spray.
  2. In a mixing bowl, stir together the flours, protein, pumpkin spice, baking powder, baking soda and salt.
  3. In another bowl, whisk together the eggs, pumpkin, milk, coconut sugar and vanilla.
  4. Add the wet ingredients to the dry and stir until no dry spots remain.
  5. Transfer the batter to a piping bag and fill the donut molds with batter and bake the donuts for 12-14 minutes.
  6. Remove the donuts and let them cool.
  7. Once cooled, stir the glaze ingredients together and dip each donut in the glaze and serve.
