Ingredients:

  • 1 pre-made pie GF crust (about 200g)

  • 1 1/2 cups dark chocolate chips

  • 1/2 cup butter

  • 3 eggs

  • 3/4 cup organic cane sugar or coconut sugar

  • 1 tsp vanilla extract

  • 1 heaping scoop PEScience Chocolate Truffle Protein Powder

  • 1/3 cup almond flour

  • 3 tbsp unsweetened cocoa powder

  • 1/2 tsp salt

Directions:

  1. Preheat the oven to 350 F. Gently lay the dough into the pie pan and fold the overhand under. Use your fingers to crimp the edges. Cover and chill until ready to use.
  2. Place chocolate chips and butter into a microwave-safe bowl and melt on high for 30-40 seconds. Stir smooth. If the butter hasn't melted, stir it and return it to the microwave in 15-second increments until it is melted. Be careful not to burn chocolate.
  3. Once the chocolate and butter are melted together, whisk in the eggs, sugar, and vanilla.
  4. In another bowl, stir together the protein powder, almond flour, cocoa powder, and salt. Add the dry ingredients to the wet and mix using a rubber spatula until no spots remain.
  5. Transfer the batter to the pie crust and bake for 28-34 minutes. The center should be slightly undercooked when it's ready to come out of the oven.
  6. Let cool, and then cut into 12 pieces. Enjoy!
