Mini Thyme Popovers

  • Salted butter
  • Fresh thyme


  • Preheat oven to 425F and place a muffin tin inside to get hot.
  • Over medium heat, brown the butter and thyme, set aside.
  • In a mixing bowl, vigorously whisk the milk and eggs together for 3 minutes. The mixture should be pale and frothy. (You can use a hand mixer if needed)
  • In another bowl, whisk together the flour, protein, and salt. Add the wet mixture to the dry and mix to combine.
  • Remove the hot muffin tin from the oven and spray with non-stick spray. Fill 10 muffin cavities 3/4 full.
  • Bake the popovers for 20 minutes and then reduce the temperature to 350F. Bake an additional 10-15 minutes until golden.
  • Serve immediately with butter and fresh thyme. Enjoy!
