Preheat oven to 425F and place a muffin tin inside to get hot.
Over medium heat, brown the butter and thyme, set aside.
In a mixing bowl, vigorously whisk the milk and eggs together for 3 minutes. The mixture should be pale and frothy. (You can use a hand mixer if needed)
In another bowl, whisk together the flour, protein, and salt. Add the wet mixture to the dry and mix to combine.
Remove the hot muffin tin from the oven and spray with non-stick spray. Fill 10 muffin cavities 3/4 full.
Bake the popovers for 20 minutes and then reduce the temperature to 350F. Bake an additional 10-15 minutes until golden.
Serve immediately with butter and fresh thyme. Enjoy!
