Protein Gingerbread Cookies

Ingredients

  • 1/4 cup butter, room temperature
  • 1/4 cup truvia
  • 1/4 cup brown sugar truvia
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp molasses
  • 1 cup gluten free all purpose flour (1:1)
  • 1/2 cup almond flour
  • 1 scoop PEScience Multi-purpose Protein
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp cloves
  • 1/8 tsp salt

    Directions

    • Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
    • Place the butter and truvia sweeteners into a bowl of a stand alone mixer. Using a paddle attachment, beat until creamy. Add in the egg, vanilla and molasses and mix until combined.
    • Add in the flours, protein, spices and salt and mix until a dough comes together.

    • Dust a clean surface with flour and roll out the dough until it’s 1⁄4 inch in thickness. Use gingerbread cookie cutters to cut out shapes and place them on the baking sheet.
    • Bake the cookies for 7-8 minutes. Let them cool on a baking sheet for 10 minutes and then transfer to a cool rack until completely cooled. Decorate with icing if desired.
