Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
Place the butter and truvia sweeteners into a bowl of a stand alone mixer. Using a paddle attachment, beat until creamy. Add in the egg, vanilla and molasses and mix until combined.
Add in the flours, protein, spices and salt and mix until a dough comes together.
Dust a clean surface with flour and roll out the dough until it’s 1⁄4 inch in thickness. Use gingerbread cookie cutters to cut out shapes and place them on the baking sheet.
Bake the cookies for 7-8 minutes. Let them cool on a baking sheet for 10 minutes and then transfer to a cool rack until completely cooled. Decorate with icing if desired.
