Protein Pretzel Bites and Cheese Dip

Ingredients:

For the Pretzel Bites:

  • 120g self-rising flour
  • 30g PEScience Select Multi-Purpose Protein
  • 150g plain nonfat Greek yogurt
  • ¼ tsp salt
  • 1 Tbsp light butter
  • Coarse salt or pretzel salt
  • Baking Soda Bath
  • ¼ cup baking soda
  • 4 cups water

For the cheese dip:

Directions:

  1. Preheat oven to 450°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix flour, protein powder, salt, and Greek yogurt until a dough forms.
  3. Transfer the dough to a lightly floured surface and roll it into a rope. Cut into 12 equal pretzel bites.
  4. In a large saucepan, bring 4 cups of water and ¼ cup of baking soda to a boil, then remove from the heat.
  5. Add pretzel bites to the baking soda bath for 30 seconds. Remove with a slotted spoon and place on a baking sheet.
  6. Melt butter and brush pretzel bites. Sprinkle with coarse salt.
  7. Bake for 12 minutes or until golden brown.

For the cheese dip:

  1. In a microwave-safe bowl, combine queso, milk, and shredded cheese.
  2. Microwave for 2 minutes, stirring every 30 seconds.
  3. Whisk in protein powder and cheddar powder gradually until smooth and creamy.
