Ingredients

  • 1 cup gluten-free 1:1 flour
  • 1/2 cup almond flour
  • 2 scoops Pumpkin Pie Select Protein or Gourmet Vanilla Select Protein
  • 2 tsp pumpkin pie spice
  • 1 1/2 tsp banking powder
  • 1 tsp baking soda
  • Pinch of salt
  • 4 eggs
  • 3/4 cup pumpkin puree
  • 1/2 cup almond milk
  • 1/2 cup coconut sugar
  • 1 tsp vanilla extract

Glaze

  • 1/2 cup powdered sugar
  • 1 tsp maple extract
  • 2-3 tbsp almond milk

Directions

  1. Preheat the oven to 350 F and prepare a 3-inch donut pan with non-stick spray.
  2. In a mixing bowl, stir together the flour, protein, pumpkin spice, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, pumpkin, milk, coconut sugar, and vanilla.
  4. Add the wet ingredients to the dry and stir until no dry spots remain.
