Vegan Cookie Dough Stuffed Dates

Ingredients:

  • 10 Medjool dates, pitted
  • ¼ cup almond flour
  • 1 scoop PEScience Vanilla Indulgence Vegan Select Protein
  • 1 tbsp maple syrup (or honey if not vegan)
  • 1 tbsp almond butter
  • 1–2 tbsp almond milk (start with 1)
  • ¼ tsp vanilla extract
  • 2 tbsp mini chocolate chips (dairy-free if needed)

Directions: 

  1. In a small mixing bowl, combine almond flour, PEScience Vanilla Vegan Protein, maple syrup, almond butter, vanilla extract, and 1 tbsp of almond milk. Stir until a cookie dough texture forms. If it’s too dry, add a little more almond milk.
  2. Fold in the mini chocolate chips.
  3. Open each pitted date gently without splitting it completely in half.
  4. Fill each date with a spoonful of the cookie dough mixture, pressing gently to stuff.
  5. Optional: Drizzle with melted dark chocolate or sprinkle with flaky sea salt for an extra treat.
  6. Chill in the fridge for 10 minutes—or enjoy immediately!
