In a large bowl, mix together the self-rising flour, multi-purpose protein, and sugar substitute.
Cut the butter in with a fork (so it is not one large piece), then add the Greek yogurt & cheddar cheese. Mix until there is no dry powder left, but do not over-mix.
Add the dough to a sheet of parchment paper and gently flatten the dough out into a round shape that is about 1 inch thick.
Using a knife, cut the dough Into 6 scones and slightly separate them.
In a small bowl, whisk an egg to brush over the tops of the scones. Sprinkle some chives on top, then bake at 375 degrees for 20 minutes. And enjoy!
