Ingredients:

Red Velvet Cupcake:

  • 1/2 scoop Frosted Chocolate Cupcake Select Protein Powder

  • 1/4 cup Oat Flour (or finely ground oats)
  • 1/4 cup Unsweetened Applesauce
  • 1/4 cup Milk of Choice
  • 1 tbsp Coconut Sugar or Sweetener of Choice
  • 1 tbsp Coconut Flour
  • 1 Egg
  • 1/2 tbsp Beet Juice Powder or Red Food Coloring
  • 1 tsp Baking Powder 

Frosting:

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix all dry cupcake ingredients and set aside.
  3. Mix all wet cupcake ingredients together and then add to the wet ingredients and whisk until smooth.
  4. Divide batter between 3 cupcake liners.
  5. Bake for 12-14 minutes or until a toothpick inserted into the center comes out clean.
  6. Mix frosting ingredients together. 
  7. Once the cupcakes are cooled, frost them and serve or store them in the refrigerator.
