Donuts are just fun to eat, but let's recreate them as blondies! These Strawberry Donut Protein Blondies are the perfect low carb treat to enjoy when you want a sweet treat without the sugar load. Fun foods can still be good for you & they'll help eliminate those feelings of missing out!

Ingredients

  • 1/4 cup (56g) Cashew Butter

  • 2 tbsp (30g) Coconut Oil
  • 1/3 cup (40g) Coconut Sugar
  • 1/2 cup (120g) Plain Greek Yogurt
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1 cup (140g) Gluten Free 1:1 Flour 
  • 2 scoops (64g) PEScience Cake Pop Select Protein Powder
  • 1 tsp Baking Powder
  • 1/3 cup (80ml) Unsweetened Almond Milk

Toppings

  • 2/3 cup (160g) Plain Greek Yogurt

  • 2-3 drops Red Food Coloring
  • 1/2 scoop (16g) PEScience Strawberry Cheesecake Select Protein Powder
  • Sprinkles

Directions

  1. Preheat oven to 350 degrees F.

  2. Mix together cashew butter, coconut oil, sugar, and greek yogurt.
  3. Whisk in eggs and vanilla.
  4. Stir in flour, protein powder, baking powder, and salt, alternating with milk.
  5. Pour into a parchment paper lined and sprayed 9x9 baking dish.
  6. Bake for 20-25 minutes or until a toothpick *mostly* comes out clean (do not over bake)
  7. Let cool completely.
  8. Mix together frosting ingredients except sprinkles and spread over cooled bars.
